I do not claim to be the best cook but I enjoy it! So Sunday when I saw the weather forecast for a chilly week, I knew I had to make Grannie's beef and vegetable soup!
It turned out SO GOOD that I want to share the recipe with you!
Ingredients:
Steak Tips
Ground Beef
2 Large Cans of Diced Tomatoes
V8 Juice
Beef Broth
Elbow Macaroni
1 Potato
Celery
1 Onion
1 Bag of Frozen Soup Vegis
1 Small Bag of Frozen Sweet White Corn
Adobo (in the spice section)
Cook time: 2.5 Hours
Step 1: Add your cans of tomatoes, half the bottle of V8 juice, 2 cups of beef broth and 4 cups of water to a GIANT soup pot and start to heat on the stove on low.
Let sit for 30 min stirring occasionally.
Step 2: Cook your steak tips with onions and celery for flavor in a separate pan. I also like to sprinkle Adobo on everything, so I have added it here. That is the ONLY spice outside of salt and pepper I used! As Grannie says, "You don't want it to taste like an Itallian dish because its not!"
Once cooked, add to the soup pot. I like to add this early so the meat can soak up the juices and unlike the ground beef, it won't fall apart in the mixture.
Step 3: Cut up your potato into bite sized pieces and add to the soup pot. These will take an hour to get to the right consistency in the heated liquids.
Step 4: Add your bags of frozen vegis and corn. Yum.
Step 5: Take a break. Keep the pot on low heat and cover. Stir occasionally for 40 min.
Step 6: Next, add elbow macaroni.
I used noodles made of quinoa since I am trying to be healthy haha. They actually tasted exactly like traditional pasta.
Step 7: Pack the ground beef into small meat balls and cook with onion and Adobo.
And then add to mixture.
THEN once the noodles are cooked, you have soup!
And it makes so many servings! I will be eating it all week! Ryan likes to add hot sauce to his for all you people with spicy taste buds.
I just wish I could send some to my best friend in New York...With all the terrible snow they're getting I guess I don't have much to complain about!
